Crock Pot Taco Soup


Remember how everyone used to rush home after church on Sunday mornings and either you had a roast in the oven or Mama fried chicken while everyone read the funny papers?  I used to love to read Charlie Brown and Little Lulu and later when I got a little older I really liked the Family Circus and  I did not fully understand them at the time.  Now that I have lived through my own little Family Circus and I think I am not quite out of it yet. I could write the comic strip myself!

Times have changed!
Not only do you not take it for granted that everyone is attending church come Sunday morning but the church attenders rush to their restaurant of choice after the morning service in an attempt to beat out the neighboring congregation who lets out just minutes after your congregation lets out ...all in good spirit of course!

What does that have to do with Taco Soup you ask?
Well, as a family we decided to start cooking in for Sunday noon meals.
Living in a small town has narrowed our choice of eating places.  Oh, we have our choice of Mexican food places and everybody has a Bill Miller's BBQ and all the McDonald's, Whataburger, and the like.

So this past Sunday we took out our crock pot and opened a few cans and dumped them together added fried hamburger meat and onion, a couple of flavoring packs and left it cooking during church.  Once we got home we took out the salad makings and package of tortilla chips, the grated cheese, maybe even sliced an avocado and had our meal in minutes.

And then we settled down for a peaceful afternoon.....or tried!

I can't say it was better than the old days of my mother's fried chicken which, by the way, bears little resemble to those fried chicken places were you can pick up a bucket or two.  But everyone in our crowd around our own dining table went away happy!

Now if I can just get them to leave the tips I would really like this crock pot Sunday thing!

Taco Soup

1 -1 1/2 lbs hamburger meal
1 sweet onion, chopped
1 pkg McCormick Taco Seasoning
1 pkg Ranch Salad Dressing & Seasoning pack
2 cans pinto beans
2 cans whole corn
1 can diced tomatoes
1 can Rotel tomatoes

Brown the hamburger in a skillet.  Once browned place in crock pot.  Saute chopped onion and place in crock pot.  Add the remaining ingredients and stir together.  Turn crock pot to low and leave until noon.   (If not using a crock pot simmer for 30 minutes to an hour.)

Serve with Tortilla chips, grated cheese and chopped avocado.

  2. No, I guess I kept thinking I would find a five or ten under some plate like the tooth fairy visited. Maybe, a tip jar would be good!
