Doug's Cheese Ball

Doug did his graduate work at the University of Texas and he is a really big fan!! He is heading to a game as I write this! He likes for me to have a cheese ball in the refrigerator for him to munch on during football season. Read the recipe by clicking on "read more".


Doug's Cheese Ball
2 8 oz. packages cream cheese, softened
2 tablespoons liquid smoke
1 tablespoon lemon juice
garlic salt to taste (maybe 1/2 teaspoon)
Six pepper flakes to taste (about 2 teaspoons)
chopped nuts (optional) (about 1/2 cup)
2 cups grated cheddar cheese


Cream the cream cheese in the mixer. Add the liquid smoke, lemon juice, garlic salt, and pepper flakes. When blended, mix in nuts and cheese. Add the cheese slowly so you don't get it too dry. It should still be fairly soft when mixed. (It might take a little more or less of the cheese.)


Sprinkle chili powder on a plate and scoop the cheese mixture into the middle of it. Form it into a ball, coating all sides with the chili powder.
NOTE: you can choose to coat the sides with chopped nuts if desired.
Serve with snack crackers or chips. This is best if you remove it from the refrigerator and let it come to room temperature before serving.
